This one pot gnocchi is an amazing tomato based gnocchi sauce recipe. There are so many delicious flavours, why not try it with our homemade gnocchi?
?Serves: 4-6
Prep: 10mins Cook: 15-25mins
Ingredients
- 1 onion
- 1 teaspoon garlic
- 1 zucchini
- 1 carrot
- Handful mushrooms
- 1 tablespoon extra virgin olive oil or vegetable oil
- 1 jar passata (tomato puree in a jar, in supermarket in pasta section)
- 420g red kidney beans or lentils, drained
- 1 500g packer gnocchi (either bought or here is our home-made recipe)
- Optional – fresh parsley (if you have)
Directions
- Chop onion, mince garlic and dice zucchini, carrots and mushrooms (Why not get the kids involved using our Foost first or next knife?)
- Heat oil in pan
- Add onion and garlic into pan
- Cook for a few minutes
- Add veggies, cook for further 2-3 minutes
- Add passata and beans/lentils
- Cook for another 2 minutes
- Add gnocchi and cook for 10 minutes (if using home-made gnocchi only cook for 5 mins)
Notes
Garnish with some fresh parsley if you have.
