I love simple cooking and I also love reducing food wastage. These cookies are simple, easy and they use up all those sad looking bananas in the fruit bowl. They are also great for making with the kids! You can let the kids help with the cookies design, mixing and rolling into balls.

Ingredients
- 3 large ripe bananas
- 2 ½ cups oats
- ½ cup extras
Extras suggestions:
- Craisins (dried cranberries)
- Cinnamon (1 teaspoon not 1/2 cup)
- Choc chip cookies
- Sultanas
- Shredded coconut
- Chopped dates
- Diced dried apples
- Roughly chopped walnuts
- Diced dried apricots
- Chia seeds (1/3 cup)
(if you need a little more moisture, add a touch of extra virgin olive oil)
Directions
- Pre-heat oven to 180°C
- Line a baking tray with baking paper
- Mash bananas in a bowl
- Add oats and ‘Extras’ of choice
- Mix together with a spoon
- Roll mixture into balls
- Place on an oven tray and flatten slightly
- Bake for 20 mins
- Allow to cool and enjoy!
Notes
Great for freezing, as snacks, for picnics and in lunch boxes.
Try making these into muesli bars by shaping them into bars or press mixture into a slice tin.
