These amazing crumpelets are a cross between a crumpet and a pikelet. What a great alternative to toast, why not try them with our chia jam!
Makes: 24
Prep: 15-20 mins Cook: 3 mins
Ingredients
- 2 cup water
- 2 cup milk
- 2 teaspoons dried yeast
- 2 cups white self-raising flour
- 2 cups wholemeal self-raising flour
- 1 teaspoon caster sugar
- 4 tablespoons extra virgin olive oil
Directions
- Place water and milk in bowl and microwave on high for 1 minute until hot
- Remove from microwave and stir in yeast
- Leave for 10-15 minutes until mixture is frothy
- Combine flour and sugar in a bowl
- Make a well in the centre
- Pour in milk mixture and oil
- Whisk until combined
- Place egg moulds in hot pan and grease with oil or butter
- Fill each mould 1/3 of the way with mixture
- Cook until bubbles form on the surface
- Remove moulds and flip over cooking for further 30 seconds
