This zucchini parma is a delicious and easy recipe that puts a twist on the classic family favourite. It is a great way to help you get in that extra serve of veggies.

Ingredients
- 1-2 zucchini
- ½ cup plain flour
- 2-3 eggs
- 1 cup breadcrumbs (or 3 pieces multigrain breaded, toasted and blitzed in food processor)
- Olive oil for frying
- 2 tablespoons tomato paste (salt-reduced)
- 1 cup grated cheese
Directions
- Preheat oven to 180°C
- Cut zucchini in half and then slice into pieces longways
- Get out three bowls. Put flour in one, beaten eggs in the next and breadcrumbs in the third
- Take a piece of zucchini and dip both sides in flour, then egg, then breadcrumbs
- Repeat with remaining zucchini
- Heat oil in a pan on medium heat. Cook zucchini in pan until crumbs are golden, about three minutes each side
- Line a baking tray and place cooked zucchini onto it
- Spread tomato paste on zucchini
- Top with grated cheese
- Cook in oven for 20 mins or until cheese is golden
- Serve with a crunchy salad
