Fruit salad is a great snack, so why not make it themed with some green and gold coloured fruits with our ANZAC crumble! Perfect for the warmer weather.

Ingredients
- ¾ cup of green and gold fruit in total
- Green (kiwi fruit, green apple, rockmelon, green grapes, pear)
- Gold (banana, cantaloupe, mandarin, orange, pineapple, gold kiwi fruit, apricot, peach, nectarine)
- ¼ banana
- 1 tablespoon oats
- ½ teaspoon coconut
- Dash cinnamon
- Dash honey or golden syrup, optional
- ½ tablespoon dried fruit (sultanas, craisins, dates)
Directions
- Wash fruit
- Dice fruit, keeping green and gold fruits in separate piles
- In a cup, layer about ½ the gold fruit followed by a layer of ½ the green fruit
- Repeat until all fruit is used – you should have green and gold layers
- To make crumble: in a small bowl mash banana. Add oats, coconut, dried fruit and cinnamon to mashed banana. Mix crumble
- Top fruit with crumble mixture
- If desired top with a spoonful of yoghurt
Notes
You can try another variation: Dice apples and peach, nectarine, apricot or mango. Mix fruit, top with crumble and bake in oven (180°C for 20 minutes).
