Pumpkin is such a cool vegetable, we can use it in so many recipes and cook it lots of different ways! It can be in both sweet or savoury dishes. Pumpkin triangles make a great lunch, dinner or even a delicious snack.

Ingredients
- 1 1/2 cups of pumpkin
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon nutmeg (or oregano or any herb or spice you like)
- 1 cup wholemeal self-raising four
- 1 cup white plain flour, plus extra for rolling dough
- 1 1/4 cups greek yoghurt
- 1/4 grated tasty cheese
- 1/2 a spanish onion, optional
- 2 tablespoons pepita seeds, optional
- 1/4 cup feta, optional
- 1/4 cup pine nuts or pecans
Directions
- Preheat the oven to 200°C
- Dice pumpkin into small cubes, about 5 mm
- Place on a baking tray
- If you are using onion, slice and add to try
- Drizzle with oil
- Sprinkle with nutmeg
- Bake in the oven for 15-20 minutes
- Meanwhile start with making the dough by mixing the flours together
- Add yoghurt and mix to combine
- Knead the dough for one minute on a floured surface (it should be a soft but not too sticky dough so add more flour or yoghurt if needed)
- Using a floured rolling pin, roll dough out until about 4-5mm thick
- Use a mug to cut circles out of dough, just make sure you have extra flour handy incase its still sticky
- Once you have cut circles out, roll them out a little more
- Top each with roast pumpkin and grated cheese and any other ingredients you are using (onion, feta, nuts and/or seeds)
- Fold up by folding and pinching the edges of the triangle and then flatten the corners a little (make sure they are well secured)
- Place in oven for 25 minutes until cooked
Notes
Try changing the fillings of these. You could also make sweet ones with a diced apple, cinnamon and honey mix.
