The kids will love to help make these fun little bliss ball chicks to snack on over the Easter break or at any time of the year. Nutty, tangy, full of fibre and fun.

Ingredients
- ½ cup cashews
- ½ cup dessicated coconut
- 2 medjool dates, pitted
- 1 lemon zested
- ½ teaspoon vanilla extract
Decoration:
- feathers: ½ cup dessicated coconut plus 1 drop yellow food colouring mixed together
- eyes: cut up dried cranberries
- beak: cut up pecan nuts
Directions
- Blend cashews, dessicated coconut, medjool dates, lemon zest and vanilla extract together in a food processor until well combined (add a dash of boiling water if mixture is too try)
- Shape into heaped teaspoon sized balls
- Roll in coloured coconut for feathers
- Add cranberries and pecans for eyes and beak (use a chopstick or toothpick to push them in easily)
- Store in fridge or freezer
