Looking for a healthier and cheaper option to bought muesli? Enter easy and delicious diy toasted muesli! It is a great option for a tasty breakfast or a great snack sprinkled on top of Greek yoghurt with some fruit.

Ingredients
- 3 cups grains (you can use rolled oats, puffed rice, puffed corn, puffed quinoa or a combination)
- 1 cup shredded coconut
- 3 tablespoons extra virgin olive oil
- 2 tablespoon maple syrup (or honey)
- ½ teaspoon vanilla essence
- ½ cup each of any flavours (nuts + seeds + dried fruit)
- ½ teaspoon spices (e.g. cinnamon, ginger, nutmeg) – optional
Some of our favourite combos are:
- Pecans, almonds, cinnamon and hemp seeds
- Macadamia, craison and chia seeds
- Hazelnut, chia and cacao nibs (or cocoa powder)
- Almonds, LSA mix and dried apricot
Directions
- Preheat oven to 180°C
- In a large bowl mix olive oil, maple syrup and vanilla essence (and spices, if using)
- Add grains and coconut and mix well
- Place on baking tray and cook for 15 mins
- Meanwhile prepare muesli flavours
- Dice any dried fruit and nuts you are using and mix them together in a bowl
- Carefully remove tray from oven and mix in flavours
- Return to oven and cook for a further 10 mins, stirring half way through cooking
- Allow to cool and store in air tight container
- Enjoy for breakfast with milk or yoghurt. Also makes great snack sprinkled on fruit and yoghurt
Notes
You can easily adapt this muesli mix to make it gluten free or nut free. Have fun creating your own flavour combos.
