A hearty soup for a cold evening. This chicken and veggie soup is great for making a big batch and keep some in the freezer.

Ingredients
- 1 leek or onion
- 2 garlic cloves
- 2 carrots
- 4 sticks celery
- 2 zucchini
- 1 swede
- 2 tablespoons olive oil
- 1½ – 2 litres (6-8 cups) chicken stock
- 1 cup cold water
- 1 1/4 cups dry soup mix
- 1kg skinless chicken lovely legs or drumstick/chicken thigh without skin
Directions
- Dice leek or onion
- Crush garlic
- Wash and dice carrots, celery and zucchini
- Peel and dice swede
- Heat oil in a pan on medium heat
- Add onion/leek and garlic and sauté for 2 minutes
- Add veggies and cook for 2 minutes
- Add stock, cold water, soup mix and chicken
- Cook for about 45 – 60 minutes or until veggies are soft
- Remove chicken, take off bone, cut into pieces and return to soup
