Are you an apple crumble fan but after something a little different with some extra veggies? This apple rhubarb crumble is just the recipe you need, it’s a great winter desert and the perfect recipe to use up any rhubarb you may have in the fridge!

Ingredients

Stewed fruit:

  • 5 apples
  • 1 bunch rhubarb, washed
  • Zest of one orange, optional
  • 1-2 teaspoons cinnamon
  • 1 tablespoon sugar
  • 1/4 cup water

Crumble:

  • 1/2 cup wholemeal flour
  • 3 tablespoons butter
  • 1 cup oats
  • 1/3 cup shredded coconut
  • 1/3 cup pecans
  • 1/4 cup pumpkin seeds, or seeds of your choice
  • 1/2 cup brown sugar

Directions

  1. Preheat oven to 180°C
  2. Cut apples into chunks
  3. Prepare rhubarb – wash, remove ends and cut into 2cm pieces
  4. Combine apples, rhubarb, water, orange zest (if using), cinnamon and sugar in pan and cook over medium heat for 15 minutes or until fruit starts to soften
  5. In a large bowl add flour and butter
  6. Rub butter into flour
  7. Mix in nuts, oats, coconut, seeds and 1/4 cup brown sugar
  8. In an oven proof dish (about 20cm in diameter) place fruit and top with crumble and then evenly sprinkle another 1/4 cup brown sugar
  9. Bake in oven for 40 minutes or until crumble is golden

Notes

You can also use 3 pears or 2 cups of frozen berries in place of rhubarb.
