Your family won’t believe these are made with sweet potato, a beautiful combination! Such an easy way to enjoy some extra veggies.

Ingredients
- 1 medium sweet potato cooked and pureed in blender (or mashed)
- 2 tablespoons water
- 2 cups self raising wholemeal flour
- ¼ cup honey
- 1 tablespoon cinnamon
- 1 apple peeled, cored and diced (or grated)
Drizzle: (optional)
- 1 tablespoon coconut oil, melted
- 1 tablespoon cinnamon
- 1 tablespoon milk (could be almond, soy etc for dairy free)
- 1 tablespoon honey
Directions
- Cook sweet potato and blend
- Take 1 cup of blended sweet potato and mix with 2 tablespoons water
- Add flour
- Knead for a few minutes and roll out into a rectangle (see note)
- Mix ½ cup blended sweet potato with honey and cinnamon to make a paste
- Spread paste over sweet potato dough
- Top with diced apple
- Roll into a log and cut into approximately 2 cm pieces, or thinner if you wish to make more
- Place on baking paper and bake at 180°C for 15 minutes
- To make drizzle, mix all ingredients and drizzle over scrolls when removed from oven and still warm
Notes
If dough mixture is difficult to knead and roll, add a little water to soften if required.
Grated apple could be used instead of diced apple. The amount of apple could also be increased.
