Your family won’t believe these are made with sweet potato, a beautiful combination! Such an easy way to enjoy some extra veggies.

Ingredients

  • 1 medium sweet potato cooked and pureed in blender (or mashed)
  • 2 tablespoons water
  • 2 cups self raising wholemeal flour
  • ¼ cup honey
  • 1 tablespoon cinnamon
  • 1 apple peeled, cored and diced (or grated)

Drizzle: (optional)

  • 1 tablespoon coconut oil, melted
  • 1 tablespoon cinnamon
  • 1 tablespoon milk (could be almond, soy etc for dairy free)
  • 1 tablespoon honey

Directions

  1. Cook sweet potato and blend
  2. Take 1 cup of blended sweet potato and mix with 2 tablespoons water
  3. Add flour
  4. Knead for a few minutes and roll out into a rectangle (see note)
  5. Mix ½ cup blended sweet potato with honey and cinnamon to make a paste
  6. Spread paste over sweet potato dough
  7. Top with diced apple
  8. Roll into a log and cut into approximately 2 cm pieces, or thinner if you wish to make more
  9. Place on baking paper and bake at 180°C for 15 minutes
  10. To make drizzle, mix all ingredients and drizzle over scrolls when removed from oven and still warm

Notes

If dough mixture is difficult to knead and roll, add a little water to soften if required.

Grated apple could be used instead of diced apple. The amount of apple could also be increased.
