Tuna patties make a great mid week meal. Prepare in advance for a quick meal packed with vegies and serve with salad for even more vegies.

Makes: about 12
Prep: 25 mins (plus 30 mins fridge time)  Cook: 15 mins

Ingredients

Patties

  • 1 large sweet potato
  • 425g tinned tuna, drained
  • 1 zucchini grated
  • 1 carrot grated
  • ½ to ¾ cup cheese grated
  • 1 can corn, drained
  • 1 egg
  • 1 cup + ¾ cup breadcrumbs
  • Oil for frying
  • Relish to serve

Directions

  1. Peel and chop sweet potato, steam until soft
  2. Mash sweet potato and allow to cool
  3. Combine sweet potato, tuna, zucchini, carrot, cheese, corn, egg and 1 cup breadcrumbs in a bowl
  4. Roll into patties, then roll in extra breadcrumbs
  5. Refrigerate for 30 mins
  6. Heat 2-3 teaspoons of oil in pan on medium heat (be careful as it is a soft mixture)
  7. Fry patties for 4-5 mins each side until golden brown
  8. Repeat with remaining oil and patties
  9. Serve with relish

 

Notes

You can make homemade breadcrumbs by toasting bread. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about ½ cup breadcrumbs.
