Tuna patties make a great mid week meal. Prepare in advance for a quick meal packed with vegies and serve with salad for even more vegies.

Ingredients
Patties
- 1 large sweet potato
- 425g tinned tuna, drained
- 1 zucchini grated
- 1 carrot grated
- ½ to ¾ cup cheese grated
- 1 can corn, drained
- 1 egg
- 1 cup + ¾ cup breadcrumbs
- Oil for frying
- Relish to serve
Directions
- Peel and chop sweet potato, steam until soft
- Mash sweet potato and allow to cool
- Combine sweet potato, tuna, zucchini, carrot, cheese, corn, egg and 1 cup breadcrumbs in a bowl
- Roll into patties, then roll in extra breadcrumbs
- Refrigerate for 30 mins
- Heat 2-3 teaspoons of oil in pan on medium heat (be careful as it is a soft mixture)
- Fry patties for 4-5 mins each side until golden brown
- Repeat with remaining oil and patties
- Serve with relish
Notes
You can make homemade breadcrumbs by toasting bread. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about ½ cup breadcrumbs.
