This asian inspired crunchy salad provides fresh flavours with an asian twist. That lovely combination of sweet, salty and sour with a bit of crunch. Yum!

Serves: 4-6

Ingredients

  • ¼ cabbage or half bowl spinach
  • 1 carrot
  • 1 cucumber
  • 1 handful snow peas
  • 1 red capsicum
  • ½ can water chestnuts, drained
  • ½ head broccoli
  • 1 handful coriander
  • 1 handful mint
  • cup chopped peanuts or cashews (or nuts of your choice)
  • 1 chilli, seeded and chopped (optional)
  • 1 lime
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 clove garlic (crushed – use fresh or jarred for ease)
  • ½ packet of crunchy noodles

Directions

  1. Cut veggies into thin matchsticks
  2. Dice broccoli
  3. Roughly chop herbs
  4. Combine vegetables, herbs, nuts and chilli together in a bowl
  5. To make dressing, firstly juice the lime. Combine lime juice, soy sauce, oil, sugar and garlic into a jar. Shake until sugar dissolved (or you can whisk it in a small bowl)
  6. Pour dressing over salad and mix through
  7. Top with crunchy noodles and enjoy

Notes

Add any veggies you like. Try some lightly cooked asparagus or some celery or bean sprouts.

Try adding 1 tablespoon of fish sauce or 1 teaspoon of grated (or jarred) ginger to the sauce for a different flavour.
