Fun, healthy and great for little helping hands! This colourful breakfast pizza is a great weekend morning meal and the kids will love trying what they made.
Makes: 4 small pizzas
Prep: 20 mins Cook: 20-30 mins
Ingredients
- 1 cup spinach leaves
- 1½ cups self-raising flour
- 1 cup Greek yoghurt
- 1 sprig dill
- 1 tomato, sliced
- Mushrooms
- Smoked salmon
- Red onion rings
- Cheese
- 8 eggs
- Olives
Directions
- Pre-heat oven to 180°C
- Blend spinach leaves in food processor
- To make dough: combine flour, yoghurt, dill and blended spinach
- Mix with wooden spoon
- Knead on a floured board until dough is no longer sticky (approximately two to three minutes, add more flour if necessary)
- Divide mixture into 4 pieces and use a rolling pin to roll into a circle pizza base shape
- Use sliced tomato instead of sauce for base
- Top with your breakfast toppings (try to make a face?)
- Sprinkle with cheese
- Crack 2 eggs on top of each pizza
- Bake in oven for 20 minutes or until eggs are set
- Add olive eyes (pictured above) and serve
Notes
For a firmer base on your colourful breakfast pizza, pre-bake base for 10 minutes before adding toppings.
