An easy recipe that can be modified to create a different flavour each time. A great muffin base, just change the fillings to suit. What will you choose?

Ingredients

Base mix

  • 1½ cups wholemeal flour
  • 2 teaspoons baking powder
  • ½ cup sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 cup yoghurt
  • ½ cup olive oil (plus some to grease muffin tins)
  • 1 small zucchini or carrot grated, optional (see note)

Choose your own fillings/flavours (about 2-3 of these is perfect)

  • 1 cup fruit of your choice or a mix (berries – fresh or frozen, tinned diced pineapple, grated or finely diced apples, apricots or pears)
  • ⅓ cup shredded coconut
  • ⅓ cup sultanas or other diced fruit
  • ¼ cup nuts or seeds (omit for nut free)
  • ½ cup choc chips
  • 1 teaspoon cinnamon
  • 2 tablespoons cocoa

Directions

  1. Preheat oven to 180°C
  2. Grease a 12 case muffin tray, by straying or brushing with olive oil
  3. Mix all dry ingredients together (except the fillings/flavours) and make a well
  4. Add wet ingredients in the well and mix together, then incorporate dry ingredients
  5. Mix in fillings/flavours
  6. Place in lined muffin tray
  7. Cook for 20 mins at 180°C (check using a skewer that that they are cooked

Notes

You can add grated carrot or zucchini (squeeze liquid out with hand) if you want to have some veggies in these. If you add veggies increase cooking time by 5 minutes.
