Ingredients

Base

  •  1 egg
  • 1 cup milk
  • 1 cup self raising flour (we usually use half white and half wholemeal)

Add

  • 1 cup fruit of choice (strawberries, banana, frozen blueberries, apple, canned pineapple)
  • cup added flavour (nuts, seeds, coconut)
  • Optional extra flavour (1 teaspoon vanilla essence, 1 tablespoon cocoa, 1 teaspoon cinnamon)
  • Optional veggie (½ grated carrot, 1 cup baby spinach (blitzed), ½ grated zucchini)
  • Oil for frying

Directions

  1. Whisk together eggs, milk and flour
  2. Add your flavours
  3. Add a little oil to a fry pan (you can use a pastry brush to spread oil) and heat on medium
  4. Spoon pancake mixture into pan
  5. When batter starts to bubble, flip pancake
  6. Cook on other side for a few mins
  7. Repeat with remaining mixture, adding a little oil to pan before each pancake if needed

Notes

Flavour suggestions:

Tropical: pineapple and coconut
Fruity: blueberry and lemon
Carrot cake: grated carrot, sultanas, walnuts and cinnamon;
Apple pie: grated zucchini, grated apple and cinnamon
Chocnana: grated zucchini, mashed banana, cocoa and cinnamon
Popeye: spinach and grated cheese
Savoury: corn, chese and grated cheese
