Homemade fruit leather is a great school lunchbox snack, it tastes just as good (if not better) as the ones from the supermarket and are full of foods that will help our bodies grow.
Fruit Leather

Homemade fruit leather is a tad fiddly but once you taste them you will realise it was worth the effort. These are a great way to use up sad fruit and veg. And serve fruit and veg in a different way

Makes: 8
Prep: 30 mins Cook: 8 hours

Ingredients

  • 1 cup roasted or steamed pumpkin
  • 1 cup peeled apple
  • 1 lemon juiced
  • 1 teaspoon cinnamon

Directions

  1. Prepare pumpkin or you can use leftover pumpkin for this recipe
  2. Preheat oven to 65°C (or use a deydrator if you have one)
  3. Blend all ingredients together to a puree
  4. Tranfer to saucepan and cook until simmering
  5. Carefully spread a thin layer on some baking paper or use a silicon baking mat for a shinier finish
  6. Place in the oven for 8 hours or until it changes from creamy to clear in colour
  7. Cut into pieces
