Are you looking for a way to make your regular side-salad more exciting? Well then you must try this super-fresh and colourful greek salad with a twist of some delicious ingredients.

Ingredients
- 4 ripe tomatoes (or 1-2 punnets of cherry tomatoes)
- 2 cucumbers
- 1 yellow or red capsicum
- 1 red onion, optional
- 1-2 avocados
- 4 tablespoon marinated olives
- 1 cup marinated feta
- 1 handful of dill, optional
Dressing
- ½ cup extra virgin olive oil
- ½ cup red wine vinegar
- 2 cloves garlic, minced
- 1 tablespoon oregano
- 1-2 teaspoons sugar
- Salt to taste, optional
Directions
- Coarsely dice the tomatoes, cucumbers and capsicum
- Slice the red onion into rings
- Peel, remove pit of avocado and cut into chunks
- Add tomatoes, cucumbers, capsicum, onion and avocado into bowl
- Pit olives and slice
- Break the feta into chunks
- Add olives and feta to other vegetables
- In a jar, add all of the dressing ingredients and shake. Drizzle the salad with dressing and toss to combine
- Chop the dill, sprinkle over the top of the salad and enjoy
