Halloumi zucchini and corn fritters are super simple and yummy. Perfect as a snack, in a lunchbox or as part of breakfast, lunch or dinner!

Ingredients
- ½ cup quinoa (cooked and cooled)
- 2¼ cups zucchini (grated)
- ¾ cup halloumi (grated)
- ½ cup corn (cooked or canned)
- ½ eggs
- ¼ cup fresh basil
- ¼ – ½ cup wholemeal flour
- 2 tablespoons extra virgin olive oil
Directions
- Place the quinoa, zucchini, halloumi, corn, eggs and basil into a large bowl
- Stir to combine and add enough wholemeal flour to achieve a batter-like consistency (not runny)
- Heat oil in a large fry pan over medium heat
- Use a tablespoon to add the zucchini mixture, be careful not to overcrowd the pan (depending on the size of your pan, you might fit 4 fritters)
- Cook for 3 minutes each side or until cooked through and golden
- Remove from the fry pan and cover to keep warm
- Add more oil to the pan and repeat with the remaining mixture
