These are easier to make than you think! Great for Mexican night or with dips and soups.

Ingredients
- 2 cups wholemeal flour (or try using half half), plus extra flour for kneading
- 1 teaspoon salt (iodised salt)
- ¾ teaspoon baking powder
- 2 tablespoons extra virgin olive oil
- 150ml warm water
Directions
- Mix flour, salt and baking powder in a bowl
- Add warm water and oil and mix
- Kneed on lightly floured surface for two minutes
- Roll dough into a ball, cover with cling wrap and leave to rest for 10 minutes (this step is important!)
- Cut tortilla dough into 6 pieces. Roll into six balls
- Take each dough ball and roll it out as thin as you can using a rolling pin
- Fry tortillas on medium to hot in a frying pan (or BBQ) for 2-3 minutes on each side. It will start to brown when cooked
- Top with your favourite toppings (we like having them Mexican style for dinner or with dips for lunch)
