Ingredients
per serve
- 2 corn thins (choose one where you can see the grains)
- 2 teaspoons mayonnaise, mashed avocado or dip of your choice
- 1 stick red capsicum
- small handful of grated cheese
- 1 lettuce leaf
- 2 cucumber circles
- 2 carrot circles
- 2 sultanas
- 2 dates
- Few pieces of crunchy noodles
Directions
To make koala
- Spread corn thins with mayonnaise, avocado or dip of your choice
- Wash and dry veggies
- Cut capsicum into small pieces
- Sprinkle capsicum and cheese onto one corn thin
- Top with lettuce
- Place second corn thin on the top of lettuce to make a sandwich
- Place cucumber between corn thins so they look like ears
- Place carrots and sultanas for eyes
- Place date for the nose
To make echidna
- Take a date and insert crunchy noodles as spikes, eyes and nose
