Did you forget to take your meat out of the freezer to defrost in time for dinner? Not to worry, this lentil as anything bolognese is the prefect dinner to use anything you have if your kitchen.

Prep: 10 mins Cooking time: 30 mins
Ingredients
- 1 tablespoon olive oil
- 1 brown onion diced
- 2 cloves (2 teaspoons) crushed garlic
- 5 mushrooms
- 2 medium carrots
- 1 large zucchini
- 1 handful spinach
- 1 broccoli stalk
- 2 x 420g tin of brown lentils, drained
- 1 handful fresh parsley or 1 tablespoon dried oregano or dried Italian herbs
- 700g jar passata (tomato puree)
- 1 packet of pasta
Directions
- Heat oil in pan on medium heat
- Add onion and garlic
- Saute for 4 minutes or until onions start to soften
- Gare carrot and zucchini and finely dice broccoli and mushrooms
- Add veggies , fry for two minutes
- Add remaining ingredients
- Simmer for 20 minutes
- While sauce is simmering start boiling your pasta
- Once all is cooked, sprinkle cheese on to serve
