Mexican dessert bowls are berry easy and approved by kids and adults. Great as a snack or healthy dessert.

Serves: 12
Prep: 5 mins    Cook: 20 mins

Ingredients

  • 1 packet mountain bread (8 pieces)
  • 2 tablespoons oil
  • A sprinkle cinnamon
  • 1/8 cup sugar
  • 250g cream cheese
  • ½ cup yoghurt
  • 1 tablespoon honey
  • 1 punnet strawberries
  • 2 punnet’s blueberries
  • 4 kiwi fruit

Directions

Tortilla bowls:

  1. Preheat oven to 180ºC
  2. Cut Mountain bread into four squares
  3. Brush squares with oil and lay 2 squares on top of each other in a muffin tray hole (repeat for each hole)
  4. Put the tray in the oven and bake for 5 minutes (watch closely that it doesn’t burn)
  5. Once ready take out of the oven and let it cool

 

Crispy nachos:

  1. Line baking tray with baking paper
  2. Cut leftover mountain bread into smaller pieces place on try and sprinkle sugar and cinnamon over the top
  3. Place in oven and bake for 5 minutes (or until crisp and slightly browned)

 

Berry salsa:

  1. Wash and dice strawberries into small pieces
  2. Peel and dice kiwi fruit into small pieces
  3. Wash and cut blueberries in half
  4. Place all fruits in a bowl and mix

 

Sour cream:

  1. Place cream cheese, yoghurt and honey into a bowl and mix until you reach a smooth consistency (like sour cream)

 

Assemble:

  1. Layer sour cream into the bottom of each Mexican bowl
  2. Add a layer of berry salsa
  3. Top with your crispy nachos and enjoy

 

Notes

Try adding raspberries or other fruit into the mix or even some basil or mint for colour and flavour.
