Noelle’s plum cake is a great recipe to get your kids baking in the kitchen. I have to thank to my mum for this recipe, she often makes it with my little ones!

Ingredients
- 6-8 fresh or tinned plums (or apricots)
- 2 eggs
- ⅓ cup brown sugar
- 1 teaspoon vanilla essence
- 1 ¾ cups wholemeal self raising flour
- 250g plain yoghurt
- 50ml oil (2 tablespoons)
Directions
- Preheat oven to 180ºC
- Take plums (or apricots), halve the fruit with a knife and remove the stone
- Whisk the eggs and sugar together in large bowl until pale and fluffy. Mixture should slightly thicken (approximately 2 minutes)
- Add vanilla essence
- Sift the flour and fold into the bowl containing the egg, sugar and vanilla mixture
- Mix in the yoghurt and then the oil. Make sure it is thoroughly combined but do not over mix or cake will become tough
- Lightly grease a cake tin
- Take the plum (or apricots) segments and place cut side down (flat side down) to cover the bottom of the tin (so that when you flip it at the end, you see the inside of the fruit)
- Carefully pour batter on top of fruit
- Bake in oven for 30-35 minutes until a skewer inserted into the centre comes out clean
- Leave cake in tin to cool for 10 minutes before transferring to a rack to cool
Notes
This recipe is so versatile- use fresh or tinned fruit. Plums or apricots work well, but can use other fruit like apple and pear.
