This tasty meal is a family favourite and only requires one pan to wash up too!

Prep: 10 mins Cook: 15-20 mins
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 onion, diced
- 2 cloves garlic crushed
- 1-2 capsicums (your choice of colour, I like to use red), diced
- ½ teaspoon sugar
- 1 teaspoon cumin
- 1 paprika
- Chilli flakes, to taste (optional)
- 2 x 425g tinned tomatoes
- 6 eggs (less if smaller pan)
Directions
- Heat oil in pan on medium heat and add diced onion and garlic. Sauté for 3 minutes
- Add capsicum and cook for another 5 minutes
- Add sugar and spices and cook for 1 minute
- Add tinned tomatoes and bring to simmer
- Reduce heat slightly and crack eggs onto tomato mixture. Leave space between each egg. I do 5 around the outside & one in the middle
- Cover and cook for 5-7 minutes or until eggs are cooked to your liking
