Looking for your next Meat Free Monday without feeling like you are missing out? Then try this pulled jack fruit and soba noodle buddha bowl! This is loaded with different vegetables and a flavoursome pulled pork alternative that will have you and your family wanting more.

Salad Ingredients

  • 400g of soba noodles
  • 2 cups of baby spinach leaves
  • 2 cups of purple cabbage, thinly sliced
  • 2 medium carrots, diced
  • 1 medium red capsicum, thinly sliced

Pulled Jack fruit Ingredients

  • 2 x 280g (drained weight) of young green jack fruit in water, pieces or shredded
  • 1 medium onion, diced
  • 1 teaspoon olive oil

Lemon Soy Sauce Dressing Ingredients

  • 6 tablespoons fresh lemon juice
  • 5 tablespoons honey
  • 4 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 3 cloves of garlic, minced
  • Pinch of chill flakes

Directions

  1. Add all dressing ingredients into a small jar with a lid. Shake this well to mix all ingredients while adjusting to taste. Set this aside
  2. Using a large frying pan, place on medium heat and add in olive oil in
  3. Add onion to  pan, cook for 4 minutes until it becomes translucent
  4. Rinse, drain and dry the jack fruit, cut jackfruit if needed
  5. Place jack fruit into the frying pan and cook for 5 minutes
  6. Add the dressing to the fry pan, coating the jack fruit, reduce the heat and let this simmer for 6 minutes (stir occasionally)
  7. Once the jack fruit has cooked, remove from heat and set aside
  8. Bring a medium sized pot of water to the boil and add the dry soba noodles (stir and cook according to the instructions on the package)
  9. Once cooked, drain noodles in a colander and rinse with cold water. Leave in colander before serving
  10. To assemble the bowl, divide the soba noodles and salad ingredients between four bowls
  11. Lastly divide the jack fruit between the four bowls placing this in the middle. Drizzle remaining dressing over the rest of the salad before serving

Notes

You can adjust this recipe to include more vegetables such as cucumbers and radishes

If you wish to include a source of protein you can add in your choice of  legumes, beans or lentils into the jack fruit mixture or in the buddha bowl

If your kids are not used to the texture you can serve the jack fruit mixture as a side dish.
