Sweet potato is one of my favourite veggies and roasted sweet potatoes is one of the most delicious ways to eat them! Crispy skin and sweet caramelised insides, Yum! Plus they are lower GI than regular potatoes, so eating a mixture of both keeps us fuller a little bit longer.

Ingredients
- 3 medium sweet potatoes
- 2 teaspoons minced garlic
- 1 tablespoons extra virgin olive oil
- 2 teaspoons butter (melted)
- ½ cup grated Parmesan Cheese
- ½ teaspoon dried Italian or mixed herbs
Directions
- Preheat oven to 200°C
- Cut sweet potatoes into 2 cm cubes
- Mix together garlic, oil, butter, parmesan cheese and herbs in a bowl
- Mix in sweet potatoes and coat well
- Line a tray with baking paper
- Spread sweet potatoes on tray
- Cook for 30 minutes or until soft and golden

Notes
No need to peel sweet potato unless skin is super dirty, just wash and scrub to remove dirt.
