Teryaki Beef

This teriyaki beef recipe is a quick, simple, delicious dinner idea using items you probably have in the fridge or cupboard! It can be made with any meat or alternative, depending on you families preferences, such as chicken, salmon or tofu.

?Serves 4-6
Prep: 10-15mins  Cook: 15-20mins

Ingredients

  • 1/3 cup soy sauce
  • 1-2 tablespoons honey
  • 1 teaspoons crushed garlic (used fresh or jarred for ease)
  • 2 teaspoons crushed/grated ginger (use fresh or jarred for ease)
  • 1 tablespoon warm water
  • 500g beef strips
  • 1 red or brown onion
  • 2 carrots
  • 1 zucchini
  • 1 red capsicum
  • 1 bunch bok choy
  • 1 tablespoon sesame or sunflower oil
  • handful cashews
  • 2 tablespoons sesame seeds

Directions

  1. To make the teriyaki sauce, in  a small bowl combine, soy sauce, honey, garlic, ginger and warm water.  Stir to combine. (if honey doesn’t melt with warm water, microwave for 10 seconds)
  2. Place beef in larger bowl and pour sauce over the top and mix (leave to marinate whilst you prepare veggies)
  3. Dice onion and cut other veggies in strips
  4. Heat oil in large fry pan or wok and add onion. Cook for a few minutes until soft
  5. Turn heat up and cook beef for a couple of minutes only so beef is tender (leave excess marinade in the bowl). Remove from pan
  6. Add carrots and zucchini to pan and cook for two to three minutes
  7. Add the rest of your veggies, nuts and sesame seeds and cook for another two to three minutes (or until veggies are at your desired crunch)
  8. Add beef and left over marinade back into the pan and warm for one minute
  9. Serve with brown Basmati rice

Notes

Try this with chicken (cut chicken into small pieces and cook on medium heat for around 10-15 minutes or bake in the oven at 180ºC for 20 minutes, cut in half to check it is cooked), salmon or tofu

Use any veggies you like, perhaps try some snow peas, broccoli and tinned baby corn

You can cook this in the oven for ease. Put all ingredients on a tray and bake for 20 minutes at 180°C
