Watermelon Halloumi Salad

Watermelon and halloumi salad is a sweet, salty and delicious dish for your tastebuds. Try this refreshing salad as a colourful side for lunch or dinner.

Ingredients

  • 1 tablespoon vegetable oil (olive or sunflower)
  • 1 x wholemeal pita
  • 1 garlic clove, peeled
  • 1 pinch of salt
  • 1/2 iceberg lettuce (can use baby spinach or rocket)
  • 1/3 cup fresh mint leaves
  • 1/3 cup fresh coriander leaves (optional)
  • 1 cucumber
  • 1 avocado
  • Chunks of watermelon (use as much or as little as you like)
  • 1 packet 180g halloumi cheese

Dressing (optional, you can dress half of the salad or leave it on the side)

  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 4 tablespoons olive oil
  • 1 tablespoon honey
  • 1 sprinkle turmeric

Directions

  1. Heat oil in frypan on medium heat
  2. Cut pita into quarters
  3. Cook for 2-3 minutes each side until crisp but not burnt
  4. When you take it off, rub one side with garlic and sprinkle with dash salt (repeat with other quarters pita)
  5. Wash and thinly slice lettuce and place on platter
  6. Finely dice herbs and sprinkle on lettuce
  7. Wash cucumber reel into ribbons using a vegetable peeler and place onto salad
  8. Slice avocado and place on salad
  9. Cut watermelon into pieces and place on salad
  10. Cut pita into smaller croutons and add to salad
  11. Once pita is finished cooking, slice halloumi into 5cm lengths
  12. Cook halloumi in fry pan on medium heat for about 2 minutes each side (or until golden)
  13. Add halloumi to salad
  14. To make dressing, whisk ingredients in a bowl or combine in a jar and shake
  15. Drizzle dressing on salad and enjoy
