Here are the festive puddin’ truffles! They look fabulous, not too sweet, full of fibre and Christmas spices.

Ingredients
Truffles
- 100g pitted prunes
- 180g almond meal
- 1 fresh orange – juice and zest
- ½ tsp cinnamon
- 1 small pinch ground cloves
- ¼ tsp ground allspice
- ½ tsp vanilla extract
- 1 pinch sea salt
- 30g plain cocoa powder plus extra for dusting
Decorations
- 200g melted white chocolate
- ¼ tsp peppermint extract
- 4 cranberries, chopped into 3rds for berries
- 24 pumpkin seeds for leaves
Directions
- Blend all truffle ingredients in a food processor until smooth (except extra cocoa for dusting)
- Roll into 12 balls
- Gently toss in cocoa powder to prevent sticking
- Melt white chocolate and peppermint extract
- Using a teaspoon, drip chocolate mixture over the top of truffles
- Add 2 pumpkin seed “leaves” and ⅓ cranberry to decorate
- Keep covered and chilled in fridge
