We love the zucchini chips from Grill’d so we thought we would make our own. These are easier to make than you think, and have a nice crunch to them.

Ingredients
- 2 medium zucchinis
- 1 cup panko bread crumbs
- ½ cup finely grated parmesan cheese
- 1 egg
Directions
- Preheat oven to 200°C
- Wash and cut zucchini by cutting into thirds and then each third into 4 to 6 long pieces
- In a shallow bowl mix the breadcrumbs with the parmesan cheese
- In a medium bowl, lightly beat the egg
- Add zucchini to egg and mix to coat (it will go all gooey over zucchini)
- Take a piece of zucchini coated in egg and place in bowl with breadcrumbs and cover with breadcrumbs (you might need to stick the crumbs on a little)
- Place on a lined tray
- Cook for 30 mins
