The kids will love these quick fritters. Easily doubled so you have leftovers (if you are lucky!) You can sneak in some extra veggies too! (well not sneak…)

Prep: 10 mins Cook: 15 mins
Ingredients
- 1 large zucchini
- ½ cup parmesan cheese
- ¼ cup milk
- 1 egg
- ¼ cup plain flour or wholemeal plain flour
- Oil for frying
Directions
- Grate zucchini and parmesan cheese
- Put all ingredients into a bowl and mix together until combined
- Heat a little oil in the pan and heat on medium low
- Using a tablespoon, spoon mixture into pan (you choose the size you want to make them)
- Cook fritters for 3-4 mins each side
- Turn when browned and cook for another 3-4 minutes, to make sure inside is cooked through
- Place on paper towel before serving

My kids love these so I always double the recipe.
You can add any veggies you like. Try adding some shredded baby spinach, or some drained canned corn for some crunch.
