A great way to shake up school or kindergarten lunchboxes. So many colourful fillings to fill your bread sushi with.

Ingredients

  • 8 slices wholemeal or multigrain bread

Vegetarian fillings

  • ½ avocado
  • ½ carrot
  • ½ red capsicum
  • ½ cucumber
  • low fat cheese, grated (optional)

Tuna fillings

  • 2 x 100g can tuna in spring water
  • ½ celery stalk
  • 2 x 125g can creamed corn
  • 1 tablespoon mayonnaise or cheese, grated (optional)
  • 1 handful spinach leaves

 

Directions

  1. Using a rolling pin, flatten bread slightly. Remove edges from two sides of bread

Vegetarian filling

  1. Using half the avocado, spread 4 slices of bread with avocado
  2. Wash veggies
  3. Cut veggies
  4. Position bread so that crusts are at the top and bottom of bread
  5. Place veggies on top of bread leaving a 2cm strip along top edge
  6. Top with grated cheese (optional)
  7. Roll from bottom edge of bread

Tuna filling

  1. Drain tuna
  2. Wash and dice celery
  3. Combine tuna, celery and creamed corn in bowl (add mayonnaise and/or cheese)
  4. Position bread so that crusts are at the top and bottom of bread
  5. Spread tuna filling over remaining 4 slices, leaving a 2cm strip along top edge
  6. Top with spinach leaves
  7. Roll up to enclose fillings
  8. To make sushi bites, cut each sandwich into 3 rounds
