Such a flavour-packed, easy meal to put on for a family dinner or to meal prep for a delicious work week!

This flavourful, interactive dinner is perfect when you are still getting little people (and some big people) to learn to like new fruit and veg, since everyone gets to make their own.

? Serves: 4-6

Ingredients

Beef veggie mix

  • 500g beef stir fry strips
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 zucchini
  • 1 red capsicum
  • 6 mushrooms
  • 1 brown onion
  • 1 tablespoon extra virgin olive oil

Salad bar

  • 1 avocado
  • 1 tablespoon sweet chilli sauce
  • 3 tomatoes
  • 1 continental cucumber
  • 2 carrots
  • 1/2 iceberg lettuce
  • 1 can corn kernels
  • 1 can 4 bean mix
  • 1 bunch coriander
  • 200ml sour cream
  • 1 cup grated cheese
  • 6 wholemeal tortilla wraps

Directions

  1. Wash, cut and prepare salad bar and place in separate bowls and set aside for later
  2. Mash avocado with a tablespoon of sweet chilli sauce
  3. Dice tomatoes, cucumber
  4. Grate carrots
  5. Shred lettuce
  6. Drain corn and 4 bean mix and place in separate bowls
  7. Pick coriander leaves
  8. Prepare meat mix by combining beef and spices together, set aside for later
  9. Cut zucchini, capsicum, mushroom and onion into small strips/slices
  10. Preheat a fry pan on medium/high heat
  11. Heat olive oil in pan
  12. Fry onion and mushrooms for 3 minutes
  13. Add zucchini and red capsicum and cook for a couple of minutes
  14. Add beef strips and spices (onion powder, garlic powder, paprika and cumin)
  15. Cook for around 5 – 10 minutes, stirring often (reduce heat if needed to avoid burning)
  16. Check beef is cooked by slicing through a piece before serving
  17. Serve salad bar with beef mix in separate bowls so everyone can design their own wraps

Notes

This recipe can be made with any protein you desire, beef, chicken, fish or even vegetarian by using more beans in place of the meat.
