A traditional Japanese dish which is easy to replicate in your own kitchen. Japanese pancakes (okonomiyaki) are a great meal or snack idea, and tastes delicious!

Prep: 10-15 mins  Cook: 15-25 mins
Ingredients
- ¼ small cabbage
 - 2 carrots
 - 1 zucchini
 - ¾ cup water
 - 3 eggs
 - 1 cup wholemeal flour (or try half and half)
 - Sunflower oil (or your favourite veggie oil) for frying
 - BBQ sauce
 - Mayonnaise, just a little
 
Directions
- Cut cabbage as finely as you can (or pop into a food processor)
 - Grate carrots and zucchini
 - In a bowl mix together veggies, water, egg and flour
 - Heat a teaspoon of oil in a pan on medium heat
 - Spoon mixture into pan to make small pancakes
 - Turn after 3-4 minutes or when pancakes are golden and crisp
 - Cook for another 3-4 minutes
 - Repeat with remaining mixture
 - To serve, top with some BBQ sauce and mayonnaise

Okonomiyaki is Japanese for “what you like, fried” – so you can use whichever leftover meat, seafood, or vegetables you have.
