This monster roll is a fun lunch idea that kids can make themselves! Not only does it look yummy but it is packed full of goodness to keep them going for the rest of the day.

Makes: 1
Prep: 5-10 mins 

Ingredients

  • 1 wholemeal roll
  • 2 teaspoons mayonnaise, mashed avocado or dip of your choice
    (try tzatziki)
  • 1 grated carrot
  • 3 slices cucumber
  • 1 slice cheese
  • 1 lettuce leaf
  • 1 slice red capsicum
  • 2 green olives
  • 2 toothpicks

Directions

  1. Spread roll with mayonnaise, avocado or dip of your choice
  2. Wash and dry veggies
  3. Top dip with grated carrot, cucumber slices, cheese and lettuce
  4. Add red capsicum slice for the tongue (sticking out)
  5. Close roll
  6. Pop olives on toothpicks and insert for eyes

Note:

You can use any vegetable instead of those listed. An option is to substitute eyes for cherry tomatoes.
