salmon patties

Me and my daughter love these, I don’t serve fish as much as I’d like to so these are a great option for adding more fish into our meals.

I have to be honest, fish is not a favourite with everyone in my house although me and my daughter love it. I don’t serve fish as much as I’d like to, it has been a slow journey getting my kids to enjoy it. Recently, I served these salmon patties as burgers as my kids love burgers.

Prep: 30 mins Cook: 10 mins

Ingredients

  • 1 large sweet potato
  • 415g tinned salmon, drained
  • 3 tablespoons diced fresh coriander
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon sweet chilli sauce
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 – 3/4 cup extra breadcrumbs
  • Oil for frying

Dipping sauce

  • 3/4 cup Greek yoghurt
  • 2 teaspoons sweet chilli sauce

Directions

  1. Peel and chop sweet potatoes
  2. Steam until soft
  3. Mash sweet potato and allow to cool slightly
  4. Combine sweet potato, salmon, coriander, sweet soy sauce, sweet chilli sauce, egg and breadcrumbs
  5. Roll into patties and roll in extra breadcrumbs
  6. Heat 2-4 teaspoons of oil in pan on medium heat
  7. Fry patties for 4-5 minutes each side until golden brown and place on paper towel to drain oil, repeat with remaining patties
  8. Serve with dipping sauce: combine yoghurt and sweet chilli sauce

Notes

You can make homemade breadcrumbs by toasting bread and then blitzing it. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about 1/2 cup breadcrumbs.

You can make these ahead of time to store in fridge and fry just before serving.

Your children may like them with tomato sauce.
