Sandwich Sushi

Are you a lover of sushi? If you are then try this sandwich sushi. This is great for school lunchboxes and adds a little variety into the day. I promise these are easy and we have step by step instructions to show you how.

Makes: 4 sushi sandwiches
Prep:  40 mins Rest: 15 mins

Ingredients

  • 1 cup sushi rice
  • 3 tablespoons sushi rice vinegar
  • 4 nori sheets
  • 1 small Lebanese cucumber
  • 100g tinned tuna in spring water
  • 1 tablespoon mayonnaise
  • ½ avocado

Directions

  1. Rinse rice under cold water
  2. Place rice and 2 cups water in saucepan and bring to boil
  3. Simmer uncovered for 12-15 minutes, stirring occasionally until water is absorbed
  4. Remove rice from heat and leave for 10 minutes
  5. Place rice in bowl and stir in sushi vinegar
  6. Allow rice to cool (you can speed the cooling process by covering a tray with foil and spreading rice over it to cool)
  7. Prepare fillings: mix mayonnaise and drained tuna, slice cucumber and avocado
  8. To make the sushi sandwich, lay out a piece of foil just bigger than the nori sheet, the place the nori on top with shiny side down

  9. Add ¼ cup of rice to the middle of the sheet. Wet your finger tips and flatten the rice and shape it to a diamond in the centre of nori (make sure you leave the edges free) sandwich sushi
  10. Add another ¼ cup of rice on top and press down

  11. Wet the edges of the nori and fold each corner into the centre to create a sealed pocket
  12. Wrap the foil or glad wrap up and leave the sushi in the fridge for at least 15 minutes to allow the rice to soak into the norisushi sandwich
  13. Repeat with the other 3 sushi sandwiches
  14. To serve, unwrap the sushi and slice in half with a sharp knife

Notes

You can use brown rice if you like, you will need 2½ cups water and to cook for about 30 minutes. Be mindful as sushi doesn’t hold together quite as well with brown rice.
