Tasty and healthy sausage rolls. The perfect addition to your next birthday party or even for dinner any time of year!

Makes: 16-18
Prep: 15 mins  Cook: 25-45 mins

 Ingredients

  • 1 onion
  • 1 red capsicum
  • 1 cup diced mushrooms
  • 2 zucchinis
  • 2 carrots
  • 1 large granny smith apple
  • ¼ cup parsley or coriander
  • ½ cup breadcrumbs or quick-cook oats
  • 250g premium beef mince
  • 250g chicken mince
  • 1 egg
  • 2 tablespoons tomato paste
  • ¼ teaspoon sweet paprika
  • 8 mountain bread wraps or 3 sheets puff pasty (defrosted)

Directions

  1. Preheat oven to 180°C
  2. Dice onion, capsicum and mushrooms
  3. Grate zucchini, carrots and apple
  4. Roughly cut herbs
  5. Place all ingredients except the mountain bread/pastry in a large bowl and mix
  6. With clean, dry hands (or wearing gloves), place the mince mixture down one edge of a bread wrap, in a sausage shape. If using pastry, then cut lengthways and place filling down middle (lengthways)
  7. Brush edges of wrap with water and roll firmly (for pastry, fold pastry to cover filling)
  8. Flip to make sure seam is on the bottom. Cut into 2 pieces (for mountain bread) or 3 pieces (for pastry). Repeat with remaining wraps/pastry and mixture
  9. Place on a tray lined with baking paper and cook for 25 minutes. If using pastry, cook for 40-45 mins at 200°C

Notes

To make your own breadcrumbs, toast two slices of multigrain bread, then mix in a processor for 5 seconds until they form breadcrumbs, or place in a plastic bag and smash with a rolling pin.

You can make them using only beef by using 500g beef mince and no chicken mince, if you like.
