This deconstructed sushi bowl incorporates the Japanese flavour, nourishment, and texture of a classic sushi roll, but in a bowl instead. Too easy! A simple and delicious recipe that’s perfect for the whole family.

Ingredients

  • 1 cup brown rice or sushi rice
  • 2 tablespoons sushi rice vinegar
  • 1 nori sheet
  • Soy sauce (to serve)

Filling ideas:

Use some veggies:

  • Lebanese cucumber, washed and julienned (cut into 5cm long, thin
  • strips)
  • Carrot, washed and grated
  • Cherry tomatoes, halved
  • Red capsicum, washed and julienned
  • Avocado, sliced lengthways
  • Baby spinach
  • Asparagus, steamed
  • Snow peas, ends trimmed and cut in half
  • Edamame beans (found in freezer section)
  • Pickled ginger

Add a protein:

  • Smoked salmon
  • Egg omelette, cut into lengths (mix egg with a little sushi vinegar and cook in a little oil)
  • Teriyaki chicken or beef or tofu
  • Tinned tuna
  • Nuts and/or sesame seeds

Plus

  • Drizzle of mayonnaise
  • or anything you like

Directions

Preparing Rice – Absorption method

  1. Rinse rice under cold water
  2. Place rice and 2 cups water in saucepan and bring to boil (if using brown rice add 2½ cups water)*
  3. Simmer uncovered for 12-15 minutes (30 minutes for brown rice), stirring occasionally until water is absorbed*
  4. Remove from heat, then cover and leave for 10 minutes
  5. Place rice in bowl and stir in sushi vinegar
  6. Allow rice to cool (you can speed the cooling process by covering a tray with foil and spreading rice over it to cool)
  7. Meanwhile, prepare fillings by washing and cutting vegetables, draining tuna or cooking asparagus and/or omelette (You can get the kids involved during this step using our Foost first or next knife)

Making Sushi Bowl

  1. To build the sushi bowl, place 1 cup of rice into a bowl, then add your choice of fillings
  2. Cut one sheet of nori into thin strips (about 1cm x 6cm)
  3. Top with nori strips and add any sauces you like (soy and/pr mayo work great)

Use any leftovers you like on this dish!
