Ingredients
- Extra virgin olive oil for frying
- 1 red onion finely chopped
- 200g Swiss brown mushrooms, finely chopped
- 350g firm tofu
- 2 cloves garlic
- 3 tablespoons finely chopped basil
- 1 egg, lightly beaten
- 2 cups wholegrain bread crumbs*
- 2 tablespoons balsamic vinegar
- 1 tablespoon sweet chilli sauce
- 1½ cups dry wholegrain bread crumbs, extra*
Directions
- Place 1 tablespoon of oil on a medium heated pan
- Add onion and cook over medium heat for 2-3 minutes
- Add mushrooms and cook for 2 minutes
- Leave to cool
- In food processor, blend 250g tofu with garlic and basil until smooth
- Transfer to large bowl and stir in onion mixture, egg, breadcrumbs, vinegar and sweet chilli sauce
- Grate the remaining tofu and fold into mixture
- Refrigerate for 30 minutes
- Shape into six burgers (more if prefer small burgers) and coat in the extra bread crumbs
- Cook in a frypan (coat bottom of pan with oil and cook on medium heat) or on the BBQ for 4-5 minutes each side
- Serve tofu burgers with salad
Notes
You can make homemade breadcrumbs by toasting bread. Place toasted bread in food processor and blitz until fine bread crumbs. 1 slice of toast makes about ½ cup breadcrumbs.
