Turkey Sausages

Home made sausages with some fruity crunch and veggie goodness, yes please!

Prep: 15 mins Cook: 15 mins

Ingredients

  • 250g spinach
  • 1 apple
  • 500g lean turkey mince
  • ⅓ cup pinenuts (about 70g)
  • ½ breadcrumbs 
  • extra virgin olive oil

Directions

  1. Wash, dry and finely chop spinach
  2. Grate apple
  3. In a saucepan, cook out spinach and apple until water is evaporated and mixutre has dried out (it is important not to skip this step or your sausages will be too wet & fall apart)
  4. In a bowl mix all ingredients together, add more breadcrumbs if mixture is too wet
  5. Using your hands or a piping bag, shape the mixture into sausage shapes (about 15cm long)
  6. Refridgerate for 30 minutes, if you have time
  7. In a fry pan with oil, fry on medium heat until cooked through, flipping on both sides (to test if cooked: the sausages should be firm when pressed)

Notes

You can make your own breadcrumbs by blizting some toast.

There are so many flavour combinations to try. You can use beef or chicken in place of turkey and try changing the fruit and veggies:

– sultana, mixed herbs and slivered almonds
– beetroot and feta
– carrot and caramelized onion
– pistachio, lemon and parsley
– honey, mustard and wombok
